Sweet Potato Chocolate Chip Pancakes

1 c all-purpose flour

1 tbsp baking powder

1/2 tsp salt

1/2 tsp ground cinnamon

1/2 tsp ground nutmeg

1 1/4 c almond milk

3/4 c sweet potato puree, about 1 large sweet potato, cooked, mashed, and cooled

2 tbsp maple syrup

1/2 c nondairy chocolate chips

Vegan butter or coconut oil, for pan

  1. In a large bowl whisk together the flour, baking powder, salt, cinnamon, and nutmeg. In a separate bowl whisk together the almond milk, sweet potato puree, and maple syrup. Pour the liquid into the flour bowl and combine well, leave some lumps.

  2. Lightly oil or butter a large skillet on medium heat. Once hot, pour 1/4 c of the pancake batter into the skillet. Sprinkle chocolate chips on top of each pancake, allow to cook for 3-4 minutes until golden brown then flip and repeat.
