Sweet Potato Chocolate Chip Pancakes
1 c all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1 1/4 c almond milk
3/4 c sweet potato puree, about 1 large sweet potato, cooked, mashed, and cooled
2 tbsp maple syrup
1/2 c nondairy chocolate chips
Vegan butter or coconut oil, for pan
In a large bowl whisk together the flour, baking powder, salt, cinnamon, and nutmeg. In a separate bowl whisk together the almond milk, sweet potato puree, and maple syrup. Pour the liquid into the flour bowl and combine well, leave some lumps.
Lightly oil or butter a large skillet on medium heat. Once hot, pour 1/4 c of the pancake batter into the skillet. Sprinkle chocolate chips on top of each pancake, allow to cook for 3-4 minutes until golden brown then flip and repeat.
